Sugar Cookies


Yields: 2 Baking Trays


Ingredients
2 cups plain flour
½ cup icing sugar
200g butter
2tbsp of cold water


Method
  1. Preheat oven to 180 or 160 fan forced – though if you’re like me and take forever to find/measure/do stuff with the ingredients don’t preheat till you finished everything
  2. Line two baking trays with baking paper
  3. Sift flour and icing sugar
  4. Place flour, icing sugar and butter in a food processor. Process in short bursts until mixture looks like bread crumbs.
  5. Add 2tbsp of cold water and process till mixture forms small moist clumps
  6. Gather dough into two balls, cling wrap it and leave in fridge for an hour
  7. Flour a flat surface, or baking paper on the flat surface
  8. Taking out one ball at a time, roll the dough out till 1cm thick
  9. Cut shapes, place on baking tray 2cm apart
  10. Baking for 12minutes or until golden underneath
  11. Leave to cool on baking tray – move them before they harden and they’ll break
  12. Decorate with icing if required (refer to instructions in back of pink icing package)

It's the first time I've ever had cookies from scratch, and they turned out quite well. Just remember that they do need to be spaced out on the baking tray. ;)

Are they crumbly and melt-in-your-mouth?

It depends, if that's how you like it bake it for about 10 minutes. It's like most cookies, you have have them soft & moist in the middle or harder.
